Article Description

The binding of the elements Cu, Zn and Fe to organic complexing compounds in coffee and tea is examined. After extraction of organically complexed metals with ethylacetate, the extract is separated by RP-HPLC. Besides usual detectors like UV-VIS- and conductivity detector some continuous-flow systems are used for the derivatisation of organic compounds like phenols, amines, thiols and carbonylic compounds on-line to HPLC. The determination of labile metal complexes with photometric reagents is also possible with this technique. The determination of the total amount of individual metals and their distribution in coffee and tea is possible by coupling HPLC with AAS. The results show correlations between the distribution of metals and of some functional groups. Especially phenolic compounds are important for the binding of the metals. Further examinations of those compounds in tea show that they belong to the group of flavonoids. © 1983 Springer-Verlag.
