Article Description
Resumen Este trabajo caracteriza la cadena de suministro de la carne en un contexto mundial y doméstico, con un énfasis en el caso colombiano. La metodología sigue la línea usada en trabajos previos en cadenas agroindustriales que buscan describir el contexto de operación de la cadena, los agentes, sus roles e interacciones, entre otros aspectos relevantes. Asimismo, el trabajo identifica problemáticas y plantea soluciones; tiene como objetivo facilitar la toma de decisiones de los stakeholders. Se concluye que las problemáticas de la cadena de abastecimiento se asocian a problemas organizacionales, de investigación y desarrollo, así como de fomento al mercado. Por último, sugiere medidas para el mejoramiento del sector.
