Peruvian gastronomy has been characterized in the last years by its gastronomic boom, since it has generated an international recognition and that additionally has managed to increase the nationalism and the love for the homeland in each the Peruvians. This gastronomic boom has been characterized by being a national pride, which was acquired through the generation of employment in the market as a consequence of the international gastronomic expansion. This is how the trajectory of Peruvian gastronomy has been highlighted by its exotic flavors, allowing the opening of new markets given the quality of the inputs and the differentiating component that is attractive to international clients. The objective of the present work is to elaborate a study or analysis of the market that allows the company to know the strengths and weaknesses, at the moment of wanting to enter new markets. In addition to this, this study will serve to analyze the viability that the company has, to generate an expansion process. In addition, the methodological approach that will achieve the objectives of the business plan for the restaurant Punta Sal, is composed of 2 scenarios, such as: first, the qualitative approach, which will identify: diagnosis and current situation of the sector and restaurant, And the object of study, the market analysis; And analysis of organization and direction; And second, the quantitative approach, which will allow us to identify: the financial analysis of the restaurant, variations in growth and decrease of the company and analysis of future profitability with the implementation of the Business Plan. The instruments that will be used for the collection and analysis of the information for the elaboration of the business plan are: the interviews, the field diary and the survey. In conclusion in the Peruvian market are the necessary conditions for the development of this type of business, since as previously mentioned there are still sectors that are little saturated and in which there would be greater commercial opportunities.
