This book chapter provides an overview of the use of peptides in the design of biosensors with applications in medical and environmental fields. Peptides exhibit unique physico-chemical features, enabling multiple functionalities that open new perspectives for the next-generation biosensors. The most important aspects concerning the synthesis and classification of peptides are presented with a focus on their roles in the development of biosensors. Multifunctional peptide-based materials applied in electrochemical and optical sensing systems are summarized, underlying the benefits occurred by the advanced nanomaterials used.
