Book Chapter Description
Grape seed oil (GPSO) is a by-product obtained from the extraction of seeds remaining from winemaking process and has awakened great interest and relevance, both in the industry and research areas. In addition, the utilization of GPSO can help eliminate waste generated by industry, establishing itself as a notable adjuvant in different treatment lines. Due to the presence of different bioactive compounds, the seed oil has a noticed antioxidant, antiinflammatory, and antitumor activity, among other benefits, which contribute to human health. Thus, this chapter aimed to review and present the main findings about the potential and different biological activities (antimicrobial, antitumor, and antioxidant) of GPSO.
