Article Description
Allergen is a substance that induces hypersensitivity reactions. Most of the food allergens are protein in nature and cause life-threatening allergies as well as influencing the quality of life. The present study was designed to evaluate the screening of major allergens in commercially available processed food commodities of wheat, soybean species and the cross reactivity of peanut in tree nuts using real-time PCR. Analysis of the results demonstrates that the SYBER Green qPCR assay is a quick and reliable method for screening of allergens. A total of 42 food samples were collected for these studies and analyzed results. Peanut allergen was detected in tree nuts of walnut, coconut, almond, and hazelnut, wheat allergen was detected in rice, oat, barely and buckwheat, while soybean allergen was detected in the species of pea, broad bean, bean seed, and kidney bean. This study will provide information for affected consumers and to do meaningful risk assessment. L’allergène est une substance qui induit des réactions d’hypersensibilité. La plupart des allergènes alimentaires sont de nature protéique et provoquent des allergies potentiellement mortelles tout en influençant la qualité de vie. La présente étude a été conçue pour évaluer le dépistage des principaux allergènes dans les produits alimentaires commerciaux à base de blé, des espèces de soja et la réactivité croisée de l’arachide avec les fruits à coque à l’aide de la PCR en temps réel. L’analyse des résultats démontre que le test SYBER Green qPCR est une méthode rapide et fiable pour le dépistage des allergènes. Au total, 42 échantillons d’aliments ont été prélevés pour ces études et les résultats ont été analysés. L’allergène d’arachide a été détecté dans les noix, la noix de coco, l’amande et la noisette, l’allergène du blé a été détecté dans le riz, l’avoine, l’orge et le sarrasin, tandis que l’allergène du soja a été détecté dans les espèces de pois, de fèves, de haricots et de haricots rouges. Cette étude fournira des informations aux consommateurs concernés et permettra d’effectuer une évaluation significative des risques.
